Here are some of my favourite Rockets (Unordered):

The Saturn V Rocket - It brought the Apollo Program / Astronauts to the Moon in the late 1960's and early 1970's.
Gemini Rocket - The Early rocket of the Apollo Program which trained Astronauts in space and experimented in docking whilst in space
Blackbird - The infamous British rocket which is able to bring small payloads to LEO (Low Earth Orbit) with only 2 small rocket stages
Electron - The NZ made rocket which is the smallest rocket in the world that can brings small payloads into LEO.
Soyuz - The Russian rocket that is able to bring 3 people into LEO or to the ISS.
